Taquitos


This is a GREAT way to use leftover meats.  You can use shredded pork, beef or chicken.  In the above picture I used leftovers from Adobo Chili Chicken Wraps.  This use of leftovers was SO delicious! 

Warm Corn Tortillas.  I lightly spray both sides with olive oil cooking spray then warm at 300 degrees for 4 minutes.

Spread a mix of shredded meat, cheese and seasonings down the middle of each tortilla, then roll up.  Lay seam side down and bake at 400 degrees for 15-20 minutes, till crispy. 

I sometimes sprinkle the tops with cheese before baking.
