Sweet Muffins

 

Nothing was better then waking up for school on a bitterly cold winter day with the sweet, warm smell of Sweet Muffins baking.  Now when I make them I do mini muffins.  That means more cinnamon and sugar per capita.  I am very grateful for this recipe.  It helped me to win Jason’s heart.  I made them often when we were dating and first married. 

Mix together well, but do not over mix–
                2 eggs
                ½ cup oil (optional - replace with Applesauce)
                1 cup milk
                3 cups flour 
                1 cup sugar
                4 t baking powder
                1 t salt
Bake in greased muffin tin @ 400 for 12-15 minutes.
Roll warm muffins in melted butter, then cinnamon & sugar mixture. 
Serve in a paper towel lined basket.

Mmmmm....can't wait to try these! I love that you included the sub of whole wheat flour and flax meal. I have another muffin recipe I make for the girls all the time that includes flax meal and whole wheat flour. They will never know the different, and I like that they get the extra protein/omega 3s.

You can't go wrong with warm muffins rolled in butter coated in cinnamon and sugar :)

These sound delicious! I'm making them right now, while you and Kevin are at choir. Bwahahahaha! Hope there will be some left for Kevin!
